The easiest way would probably be to use a report that lists the data that you
need (e.g. create a journal or ledger) and export that, which saves it as
HTML. Once you've got the HTML table, you can fairly easily fiddle with that
to create something that Excel could digest.

A different approach would be to create a new report that would list specified
accounts (for example) and construct a CSV file from them. This would be
fairly easy to do if you know (or fancy learning) Scheme, although beware that
it seems not to be possible to add new reports at runtime - you have either to
recompile GnuCash or to replace an existing report.
