Method to automatically assign an account?

During import from QIF/OFX or otherwise, there is a dialog for assigning
the account of each transaction. This is remembered by GnuCash, which
then next time will use this information to try to map it automatically.

Note that there was a bug a while back, so it might not be working fully
unless you have version 2.2.5 of GnuCash. (At least it wasn't working in
2.2.4 for me on QIF, so I upgraded.)
