The "class" feature of some products is really just a (sometimes quite 
convenient) mechanism for parallel account structures.  It can also be 
useful for reporting in a business setting where different departments 
have parallel account structures in that you can ask what did the 
company as a whole spend for, say, copying.    The latter would require 
a custom report for GnuCash, but the other parts really are just 
parallel account structures which require a certain amount of tedium to 
set up.
