Hi Trenton,

When you set up a new GC datafile (set of books), you are given the option to 
include any of the pre-defined sets of accounts.

It is up to you -  if you think they are suitable go ahead and add them.  If 
it looks like they don't apply, then don't use them.

You are free to modify the GC "chart of accounts" at any time, either by 
adding/removing/re-parenting or renaming any account to suit your needs and 
prefenences.

Actions -> New Account or Edit -> Edit Account / Delete Account

or the toolbuttons Edit/New/Delete

Note.
Tax authorities usually like to keep each "taxable entity" completely 
separate.  If you and your notary business report on the same piece of paper 
then there should be no problem to combine the books, but if the notary 
services are viewed as some form of distinct tax entity (company, partnership 
etc) it may be a good idea to use 2 GC datafiles right from the start.
