I do it the other way around.

For each group of transactions I select the Expense account.

Then GnucashDesktop, applying its built-in heuristics, assigns a default
funds account for each transactions (I guess based on the transaction
description) or using a yellow or red colour (I don't remember) suggests
that I have to select myself the checking account.
