These should be expense accounts.

The question to ask yourself is: how would you do this using pen&paper.
Once you answer that question, you can apply it to gnucash.  If you
cannot answer that question up front then I recommend you ask an
accountant to help you get set up first.  Or read up on some accounting
books.

GnuCash is a tool, but you still need to know how to use the tool
effectively.  While Gnucash can be used to keep your books, you still
have to do the work to tell gnucash how to record your transactions.
