Having been caught with this "feature" a few years back
I suggest a search of the hard drive for all files of that name. 
The name (in W7) was unchanged, just stored elsewhere which got
priority.
However, here, making a custom invoice is best, because your changes
will be overwritten when you update Gnucash,
