How to accommodate my own house construction costs in gnucash accounts?

Can you not just create a set of Expense accounts for each of the
categories you wish to track separately.  So Expenses:labour, etc.  If
you want to keep all the house ones together you could make them sub
accts of an account that includes everything.  So
Expenses:HouseBuilding:labour, Expenses:HouseBuilding:materials and so
on.
