Well, yes, it is very similar to this.  Gnucash deals with "suppliers"
(gnucash calls them "Vendors") already -- you have an A/P account and
as you post your bills it keeps track of how much you owe each
supplier.  Theoretically we could write a report to detail how much
you spent on a particular supplier, but such a report doesn't exist
(yet).

I would envision employee/payroll to work similarly.
