The Help and Guide may be found in Gnucash.app/Contents/Resources/English.lproj in HTML format. Open GnuCash Guide/index.html and GnuCash Help/help.html in your browser. Offline reading will work just fine. This is mentioned in the Readme, but it's not in a very prominent place. I'll fix that.
