You cannot run from the build dir like that. Make install first and the run it.  We recommend you configure with a unique --prefix like /opt/gnucash

for some reason I do not have any log available in that directory or
anyone in the 'vicinity'. Is there anything I would need to specifically
run to create the log? I'm trying to look it up in the docs but so far
I'm out of luck.

At this point I have all the 'necessaire' to perform a clean build and
my make check *did not* report any failure.
Still I have the following message when I start gnucash:
