Where to find Webkit2gtk-4.1 (required when building on Mac)

You seem to have ignored the bold link in https://wiki.gnucash.org/wiki/MacOS/Quartz#Preliminaries saying “Note well the warnings about Homebrew, MacPorts, and Fink! <https://wiki.gnome.org/action/show/Projects/GTK/OSX/Building#Prerequisites>“ 

The cmake error is an artifact of the way it looks for webkit (https://github.com/Gnucash/gnucash/blob/d0e7b83d364228ee9c2e7ca1d98e2cc21f56fbcd/CMakeLists.txt#L235), checking first for webkit2gtk-4.0 and if that’s not found requiring webkit2gtk-4.1. gtk-osx builds webkit2gtk-4.0, but if cmake didn’t find it that must have failed or been skipped because a prerequisite failed and you told jhbuild to keep going anyway. Do
  jhbuilbd build webkit2gtk3
to try again and if there’s an error fix it before proceeding.

But first you need to make a clean build environment that can’t find Homebrew.
