Set the LANG variable correctly and just start gnucash.
LANG should be set to, for example, "de_DE" in your system profile.
Alternatively, you can invoke gnucash as
[~] > LANG=de_DE gnucash
However, I have found that at least with 1.6.4, this doesn't always work
correctly, some menu prompts are fine directly after program startup, you
generate a new report, and the menu entries blank out; if you create your
accounts with de_DE, and then switch to the system language again to avoid
this, gnucash will create another "Opening Balances" account, because it
doesn't recognize the "Anfangsbestand" created in the German environment etc.
I have found that translated programs generally don't work for me and try to
use them in their original language or at least English, because those are
usually tested best ;-)
