If you just want to add the tax into the account, an approach is
to use the arithmetic in gnucash.

Say you buy stuff at Walmart:

Food 23.15
Toys 12.16
----------
     35.31
tax 2.82 (8%)
----------
     38.13

In gnucash enter the split for food as 23.15*1.08 and gnucash
will compute the total ($25.00) for food and tax on the food.
Similarly the split for Toys should be entered as 12.16*1.08.
Once in a while you may have a rounding error and have to add a
penny. You can also let the last split absorb any rounding errors
since gnucash will keep telling you on the last line what remains
of the split.

This of course includes the tax as part of the cost. So there is
no easy way to get the tax total out. Note that this also allows
you to put things in at different tax rates.
