I had the same problem and tried LANG=de_DE.ISO-8859-15 with the same
result (EUR mnemonic but english gnucash).
When I start gnucash from console I can see warnings like "Gtk Warning:
font 8859-1 not found".
I looked around and found the file ~/.gtkrc with a line:
fontset = "-adobe-helvetica-medium-r-normal--12-120-75-75-p-67-iso8859-1"
So I replaced the 8859-1 with 8859-15 and set LANG=de_DE@euro again and
now I can see the Euro symbol in the main accounts window and a german
translation of gnucash (and there are no more GtK font warnings).
Two problems are still remaining:
the reports and the top line with the "Net Assets" still have the wrong
symbol
