I use GNUCash in german, I assume, you are doing so too...
Date Format can be set via
"Einstellungen" --> "Einstellungen" --> "International" -->=20
"Datumsformat" (in your case "Europaeisch")

(English should be "Settings" --> "Settings" --> "International" -->=20
"Date Format"
