Highlight your checking account.
Go to account edit and make sure your checking account is set to be a bank
account and top level.
Go to your expense account do the same except it should of type expense and
top level.
Go to settings preferences. Under the general tab make sure that Use
accounting labels is not checked.
Under the Register tab make sure that the Default Register Style is Ledger
and Double line Mode is not checked.
Click OK.
When you need to make an entry. Open the checking account. You should see a
single line for each entry and the headings for the columns should be
Date Number Description Transfer R Deposit Withdrawal Balance

and should look more or less like a check register. When you want to
write a check, i.e., record the writing of a check, Put in the date,
number and description. When you tab to the Transfer column hit "e" This
should fill in Expense. (I assume you have only three accounts Checking,
Expense and Imbalance) Then tab to Withdrawal enter the amount of the
check. Hit the Enter key and Gnucash should fill in the balance and move
to the next line. A deposit is done similarly. In the Transfer column
hit e and Expense should be filled in. Record the amount in the Deposit
column and hit the Enter key.

Ignore the Imbalance and Expense accounts. If you want to add an
income account and use that for deposits that will just change
the key you hit when hit the transfer column.
