Can I use GNUCash instead of QuickBooks for *very* small business?

Sure, though that depends on exactly what you want your accounting
program to do. Like Derek, I too run my business with Gnucash. In fact,
I've been doing so since before version 1.4. However, I make very few
demands on my accounts program - I just want something to store the
numbers and add them all up for me.

Actually, in my opinion, Quickbooks was horrible to use. Again, though,
it really depends on what you want. Quickbooks tries to hide the
nitty-gritty details from you and give you a nice, pretty looking
interface. I want to look at the numbers.

If you're patient, you can certainly depend on Gnucash to do the trick,
and I'm not just telling you that because you asked me to. Even if
you're not patient, Gnucash may well still be quite suitable for your
needs, but I'm afraid I'll need a lot more information before I can
answer that one for you.
