Hi Bob,

Try going to File in Gnucash, open up New Account, and a druid will 
guide you through to opening generic accounts, and accounts within those 
generic accounts by clicking on the specific generic account.  From 
those generic accounts you can create new sub-accounts or perhaps a new 
category, such as Vendors -- I haven't tried yet.  Hope this has been of 
some help.  I'm a quicken convert and once you start figuring gnucash 
out it's pretty cool.  I left microsoft because it crashed on me twice 
in a year.  I have a small business which depends heavily on its 
computer.  Good luck!  I do work on gnucash daily.

Double entry is very sound accounting so stay with it.  It requires 
every transaction to be balanced.  Think in terms to every credit there 
is a debit. For every debit there has to be a credit. That is double 
entry bookeeping.  In our relationship with our bank, our entry is 
always going to be a debit (withdrawal) and the bank side of the 
transaction is always a credit.  The bank treats the account just the 
opposite because as our account to us is an asset because it's our 
money, to the bank it is a liability, because they have to pay the money 
back on demand (after exacting their pound of flesh).
