hi,

Yes, you need to install fink ( http://fink.sourceforge.net ) and
then from there you can run "fink install gnucash".  The only
thing I can add is that gnucash-1.8 is in "fink unstable", so
you should read the fink documentation to find out how to pull
down the unstable packages.

FWIW, it's really easy -- I did it on my mac a few months ago.
