Lots of documentation on the site (some of it getting a little out of 
date), I always do a source install, not binary. Install Apple's X11 and 
sdk, then fink itself and then the fink package system-xfree86 (fink 
install system-xfree86) and that should find your Apple X11.

Fink has several categories of software, including 'unstable' - most of 
the software in unstable is fine, don't be scared by the name - check 
out Q4.8 on this page:

Too right. Firstly there are megabytes of stuff to download, secondly it 
all has to compile. Think in terms of hours...overnight...on a slow 
machine possibly even more than a day.
It will soak up some disk space too.

This will only be necessary the first time though, future upgrades 
usually only require some of the dependencies to be downloaded again, so 
it gets quicker after the first time.

The fink-beginners mailling list archive might be helpful, and you 
should join the list if you have questions about any of this:

It really is the easiest way to go, though it might not look like it!
