No.  I honestly don't care (and personally I never save my outgoing
email).  If you care, I can add a "mail to self" flag where it will
mail all invoices to you, too.  There ya go, "saved mail" done easy.

No.  There is already room for the email address in the Customer Info.

You already have to do this, now.  So no major loss.  It's a few
seconds of additional work to fill in the extra field (which is
currently not used for anything).
