This is probably due to the current directory not being in your path.

Try:
cd /sw/bin
./gnucash

or just: /sw/bin/gnucash

Fink should have edited your configuration files so /sw/bin is in your 
path. You may need to quit X11 or just create a new terminal for those 
changes to take effect.

Don't know about this one.

I found I also had to use fink to install gconf otherwise reports won't 
work.
