What I did on the iBook was start X11, select Applications from the menu and 
Customize.
Add Item
Name, and the command.
If /sw/bin is part of your path, you can use just gnucash
If not, use /sw/bin/gnucash

To add to your path, edit ~/.bashrc

export PATH=/bin:/usr/bin:/sbin:/usr/sbin:/sw/bin
