How to make a bar chart of one account

What do you mean, "one expense account"?  The graphing is done
per-account.  "Groceries" should be one account.  So if you want
to see how much you spent on groceries you include that in the
list of accounts in the report (see the report options).

If you want to separate the tally of items you need to separate them
into different accounts.
