It's in the printer dialog. When you print any page, the printer dialog gives 
you the option to print to a file or other media. It's part of the CUPS 
setup. If you've got your print configuration set up correctly, when the 
dialog comes up there'll be the name of the printer in a drop-down box. Click 
on the drop down list and there'll be other options, like print to file and 
print to PDF. On my system, I also have print to fax and mail PDF (which 
creates a PDF and loads it as an attachment to a new email).

It's not GnuCash dependent, it's part of your basic print setup.
