Log files

Nope.  Log (and backup) files are always stored in the same place as
the data file.  There is no option to move them to another directory.

I would recommend you use File -> Open Recent if you're changing
between a set of files.  Other than that, Gnucash should remember the
last open file, so you should never really have to remember the name
of the file you're using, per se.
