Actually, if you do this: apt-get install gnucash/unstable
it should work.  Much will depend on whether you have the unstable
version of Debian, or a combined testing/unstable installation.  The
above will work with either, as dpkg will be able to find everything
it needs.  If you have testing alone, there may be a little more work
to do.
