I originally didn't have any luck with GC on Tiger (10.4.0). Once the
update to 10.4.1 was released, I was able to do a fink source-build and
had results similar to your description. It took about an hour for GC
to start up on a G3, after which it would seem to run normally. I had
the same results with a fink binary install, as well. Peter O'Gorman
suggested at the time that this was an issue which would be resolved with
the 10.4.2 update, which has, in fact, been my experience. GC now starts
up quite normally.
Interestingly, the start-up delay on a new G4 Mac Mini with 10.4.1 was
almost normal -- I had expected a start-up delay on the G4 also, albeit
proportionally shorter due to the difference in processor speed.
Another small issue is that the GnuCash Launcher available at
<http://homepage.mac.com/elliottmce/gnucash_guide/Page005.html> doesn't
appear to work quite the same way anymore for me. The first time it is
run it does start X11, but doesn't succeed in starting GC and times out.
Once X11 is started, however, subsequent attempts to run it appear to
work normally. I'm guessing it is a timing related issue in the way
these processes communicate, but I haven't had time to investigate the
matter.

I confess I haven't tried to print an invoice, so I can't confirm the
error you're getting in that situation. Otherwise, though, GC appears
to be running fine for me on a G3 (10.4.2) and a G4 (10.4.1 & 10.4.2).
