Hi,

IIRC, this came up a few months back, and it was noted that the fancy invoice 
was written as a "polished template" - some things are hard coded in the 
report.

Try hand editing the report file, which on my system is at:
/opt/gnome/share/gnucash/guile-modules/gnucash/report/fancy-invoice.scm

hint: look around line 660 for GC 1.8.9
