I'd be willing to have a whack at it using the Morphix Live CD system.  My 
understanding of the requirements are:

i.  It includes Gnucash.  Currently it looks like 2.0.2 is bundled with Debian 
Sid.

ii.  Cups must be installed.

iii.  All relavant dependencies must be included to support those two 
applications (e.g. gnome).

Is that a complete list of the requirements?
