I remember that I had problems with finding files on Windows too and
that it mostly had to do with hidden folders.  Does that help somehow?

It would be a real pity if there was no gnucash.trace file.
Alternatively, you could try to edit bin\gnucash.bat and replace
start gnucash-bin
by
start gnucash-bin --logto c:\myfile
