I ran the self update and both File Commander (after re-indexing) and the terminal window only list "gnucash2-docs 2.2.0-2 Help files/documentation for gnucash2"
When I ran 'fink install gnucash,' the response was "Failed: no package found for specification 'gnucash2'!"

googling around a bit, it turns out that the message you quoted is just
fink telling you the build failed. The informative error message is
earlier in the output.
At this point in time, you really want to to be installing the fink
package gnucash2 (rather than gnucash). You'll still eventually launch
it by typing 'gnucash' into the x11 terminal window, but gnucash 1.8.12
is still around in fink as the package gnucash.
If you have an intel based mac, trying to install gnucash 1.8.12 may be
problematic. Even though it shows up on the intel list in the package
directory, I'm not so sure it should. (I'm the maintainer for gnucash2,
but I haven't dealt with the packaging issues for gnucash in the prior
versions.)
You will have to do a 'fink selfupdate' after you enable the unstable
tree before gnucash2 will show up either in finkcommander or in response
to 'fink list gnucash' in a terminal window. You may also need to prod
finkcommander to force a reindex before it will show up. I'm not near my
mac at the moment, but I think it is the Source>Utility>Index menu item
in finkcommander. Once you can see gnucash2, you should be able to
select it in finkcommander and choose install (or 'fink install
gnucash2' from a terminal window).
With 200+ dependencies for installing gnucash on a clean system, fink
sometimes gets confused. Re-entering the install command sometimes is
enough to get by the glitch. If it isn't, installing just the package
that reports the error and then 'fink install gnucash2' will almost
always make additional progress.
