I'm surprised this isn't in the FAQ... I thought it was.  The
short answer is that there is no way in the UI to do it.  However,
once you have an invoice created you can edit your data file and
change the starting number.  Ungzip your data file, load it into
your favorite editor, and look for the "counters" section,
then look for the GncInvoice counter, and then reset the
number appropriately.
