how to erase the definitly the name of an account

When you say "the name of the old account under file in the menu", I 
believe you mean the old file name, and you've actually started a new 
data file.  Is this correct?

Have you deleted the old data file?  Simply deleting it won't remove it 
from the recently used files near the bottom of the File Menu.  For 
that, you can run at a command line:
$ gconf-editor
Look under /apps/gnucash/history
This contains the files which are listed near the bottom of the File 
Menu.  You can then change them.
