I had the same question maybe less than a month ago :)

Create an account called "Equity:Opening Balance". It should be of type
"Equity".
For example, when I started using GnuCash last month I already had a
bank account with $X in it and I already had a student loan with a
balance of $Y. So on day 1 I created the accounts:
Assets:Bank
Equity:Opening Balance
Liability:Student Loan
And I made two "transactions" that day:
- Deposit $X in Assets:Bank from 'Equity:Opening Balance'
- Credit $Y to 'Liability:Student Loan' from 'Equity:Opening Balance'
HTH
