Sounds like you actually already have it figured out.

Initial transaction
Asset:Chequing - Withdraw $225.
Income:Gift - $25 gift
Asset:Gift Card - $250 deposit

Now just use the gift card as you qouls any other kind of asset like a 
chequing.

Expense:Groceries - Spend $25
Asset:Gift Card - Withdraw $25

When you get to a point where the gift card is exhausted, you might have 
a split to account for the difference:
Expense:Gorceries - Spen $25
Asset:Gift Card - Withdraw $20
Asset:Chequing - Withdraw $5
