In some ways questions like this are a confusion of scope. GnuCash is an
accounting application, not a total business (or total non-profit)
package. It doesn't do things like "point of sale" or "inventory
control" or any of a lot of other things that a "total business package"
might do. A "business package" would normally be made up of a number of
applications that sent feeds to each other (talked to each other) and
one of the pieces likely to be included would be the accounting package
part and Gnucash might be that.
As far as I know, there probably aren't any teams of open source
developers working on a total business application and while there might
be an "inventory control project" probably not a "point of sales" (those
are typically tied to the particular sort of cash registers used -- in
other words, hardware as well as software. Inventory systems might be
tied in also. Look at register receipts that might be including "item
data" as well as how much that item cost. That information "x units of
item sold" might feed "inventory" too in an integrated system).
