Changing the default language in GnuCash

I think you will find Gnucash has adopted the locale set by your operation 
system when you installed it.

You can change the currency by going to edit/preferences/accounts. Don't 
forget to change the reports tab as well. Going to date/time will let you 
change the date and time prefences as well.
