Hi Ian,

Can't help with the git stuff, but I think that your symlink idea will lead to 
Bad Things Happening.

GC is known to occasionally trash "unexpected" files that are in ~/.gnucash, 
it is reccomended by the devs that the config is kept separate from the data 
files.

Symlinking to ~/MyData/gnucash/config-dir/ may work, though.
