Is there a way to enter my transactions to take the place of "class"

GnuCash has no concept of "Classes"  (we would call them Tags).
There's been some discussion about it, but right now we don't have
anything like that.   The best you could do right now is use the
Notes field to tag a transaction and then write some custom report
code to limit searches to notes with certain keywords.
