I use something like this:

Current Liabilities:
	Payroll Liabilities:
		FICA Tax
		FUTA Tax
		MCare Tax
		Federal Withholding
		...

Payroll Expenses:
	Labor:
		Management
		Kitchen
		Service
		Misc/Casual
	Taxes:
		Unemployment
		FICA
		MCare
		...
	Other Payroll Expenses
	      Training
	      Medical Benefits (HA!, I wish!)
	      IRA Contributions
	      ...
