Mac and Microsoft Windows both have applications to do this for you: The Mac one is in the dmg and is called UpdateFinanceQuote. The Windows one has a similar name, and it's found in the Gnucash start menu.

On Unix/Linux, just run gnc-fq-update from the command line.

In each case, it will run a program called "cpan" that may ask for permission to do things. Answer "yes" to all of them.
