Which provider did you use to install gnucash? (fink, macports, or the .dmg installer)

In general, docs are a separate package. I don't know if they are available for/with the .dmg. For fink, you have to install gnucash2-docs.

As an alternative, look at http://www.gnucash.org/docs.phtml
