I sorted this problem by deleting the incorrect entries in the Price
Editor, and adding the correct exchange rate on that day. The values are
all displayed correctly now.

Many thanks for the suggestions and assistance.

The problem, I think, was my incorrect mental model of how GnuCash
handles foreign currencies. I think I now have a more sound basis on
which to work in future!

Might I suggest that the prompting for exchange rates at posting time
actually exacerbated this idea that the exchange rates are somehow
transaction specific, which I think was a large part of the problem.
