removing old .log and .gnucash files

Unless you have chosen to retain them, Gnucash will delete them 
automatically after they are old enough.

"Old enough" is defined in Preferences -> General (under "Files", "Retain 
log files" - but this governs backups too).

But if you want to clean them out manually, that will not be a problem.
