How do I deal with delayed payments/sales?

Ok what you are saying makes sense.

I wasn't invoicing in GNU Cash, but instead externally as I need a high
level of detail in my invoice.

I have have to issue two invoices a month though so it should be easy to add
then to GNU cash too.

Having just had play around with the invoicing feature, I think I understand
it all now. Posting invoices to the accounts does make things much easier
too.
