Assuming you knew how to set up the chart of accounts for a non-profit 
the old fashioned way using pen and ink on paper what problems do you 
anticipate using gnucash rather than pen and ink on paper? You will of 
course be doing things like retitling reports (a non profit calls the 
"profit and loss" a "statement of revenues") but things like that are 
trivial.

If what you are saying is that you don't know how you would set up the 
chart of accounts for old fashioned bookkeeping then your problem isn't 
with guncash but accounting fundamentals. The gnucash tutorial can only 
give examples for the most common entities users might be using gnucash 
for. Even in the case of "for profit business" there are many possible 
variations (things some sorts of businesses need to track that others do 
not).
