That's another perfectly valid way of working, though again you need to be sure that the stick has the same drive letter everywhere you use.  Of course, there are different priorities, and if you already have PortableAppls installed on your machines, then yes, it makes sense.   However, there is little difference between running from a hard disk or a stick, except perhaps for a rather more leisurely startup ...

Since the program is free it can be installed on several computers.  I
sometimes copy my data file onto a USB stick so that I can move it
between computers that are not networked.  When computers are networked,
the data file may be accessed remotely.  When the database back end has
matured sufficiently, that may be the preferred access method.
