Recent versions of GnuCash will not let you enter a transaction with a
negative amount.  I tested it with version 2.4.10.

When I found out that this functionality didn't exist in the current
production version, I asked this list how people were handling workarounds
last winter.  Folks responded with a couple of ideas that were workarounds
until the credit note functionality appears in the next major release.  I
was able to find the thread of emails on nabble:
